Course Content (Syllabus)
Quality indices and methodology for quality assessment. Sensory evaluation and correlation with analytical methodology. Factors that determine the shelf-life of food (mode of failure). Effect of food components on shelf-life of food. Application of food additives for the extension of shelf-life. Interaction of food composition and processing methods. Determination of packaging needs for the achievement of the required shelf-life of foods.
