Students must have basic knowledge of physiology. Use of a computer to present a relevant topic.
Learning Outcomes
Upon successful completion of the course students will: a) get to know the modern post-harvest handling of fresh fruit and vegetables and their theoretical approach, b) acquire the possibility of a comprehensive approach to quality management c) understand the specifics in the preservation of the most basic fruits and vegetables.

Course Content (Syllabus)
Introduction – Challenges in postharvest handling of fruit and vegetables. Preharvest factors. Ozone. Nutritional value of fruit and vegetables and post-harvest handling. Supply chain. Ethylene and 1-MCP. Fresh-cut fruit and vegetables. Chilling injury – fruit firmness. Heat treatment. Special topics of postharvest physiology and technology.
